Might be a stupid question, and I dare not try to uninstall Easy Save 2 for the fear of ruining any links it may use... but once I have Easy Save 3 installed, is it safe to remove the ES2 files using the Assets > Easy Save 2 > Uninstall Easy Save 2? I know they don't take a lot of space but every little counts Or is it recommended to keep both until Easy Save 3 is no longer in beta?

Easy Save 3 doesn't rely on Easy Save 2, so it's safe to remove it if you don't intend on using it.

If worse comes to worse you can always reinstall it anyway
